Summer Salads - Strawberry Tomato Salad

Summertime is on the way and that means eating outside. It also means taking it easy and maybe even MORE entertaining than usual. And what better way to make entertaining easier than a bunch of yummy salads. 

I love Mark Bittman's style of cooking and how he thinks about food - a few ingredients very simply prepared. It's really to my taste lately - it makes for quicker cooking. No fancy sauces or spices to hide behind.

A few years ago he made a list called "Recipes for 101 Simple Salads for the Season". I printed it out and dragged it back and forth to the cottage every year. It's dog-eared and stained and well loved. 

Today's salad is #13 on his list. Here are the ingredients - put that pen away, you won't need it. Cherry tomatoes, strawberries, parmesan, basil, balsamic vinegar. That's it. No proportions - we've all eaten enough salads to figure out roughly how it should go together.
