Summer Salads - Peach and Tomato

Peaches, did I hear peaches? Warm from the sun, sweet, drippy peaches. It's not a long season but when peaches ARE in season, gobble up as many as you can.

Another Mark Bittman salad - this time with tomatoes. No. 2 on his list. You know the drill. Peaches, tomatoes, cilantro, red onion, olive oil & lemon juice, red pepper flakes. 

Cut up the peaches and tomatoes in similarly sized chunks. Like 'em large - go crazy. Like small bites, that's fine too. The red onion needs to be in slivers. Make a vinagrette of of the olive oil and lemon juice. Chop some cilantro. Toss it all together and add a bit of red pepper flakes. Or not. It's up to you.

We had it last night with hot dogs - burgers or steaks would be good too. It'll keep fine in the fridge for a few days.

Now get out there and have some friends over for a bbq. It's summer!
